More Oatmeal Recipes: Oatmeal Chocolate Chip Muffins

Isn’t it a great time of year to eat anything oatmeal? Especially when paired with chocolate? You’re right, there isn’t really a bad time of year for oatmeal and chocolate.

We made these over the weekend, and it’s a good thing we had the foresight to double then right off the bat or they would have been gone as soon as they were cooled.

We made then according to the recipe with the exception of using dark chocolate chips, which were a delight by the way if you’re into that sort of thing (which we are by the way). Enjoy.

Oatmeal Chocolate Chip Muffins

makes 12 muffins

1 cup whole wheat pastry flour (or all-purpose)

1 cup rolled oats

1 teaspoon baking soda

1/4 teaspoon salt

1/2 teaspoon cinnamon

1/3 cup brown sugar

1 egg

1/4 cup butter, at room temperature

1 1/2 teaspoons vanilla extract

1 cup milk (any kind will do)

1 cup chocolate chips

Preheat oven to 350.

Add oats to a bowl and add 1/2 cup of milk. Let soak for 5-10 minutes, while you prepare the first few steps of the muffins.

In a large bowl, combine egg and brown sugar and whisk until smooth and caramel in color. Add in vanilla and butter, whisking well. Try to smooth the batter as much as possible – there still may be some small butter chunks. Add flour, oat mixture, baking soda, salt and cinnamon and mix. Add remaining milk and combine until smooth. Fold in chocolate chips.

Line a muffin tin with lines and pour about 1/4 cup batter into each line. Sprinkle the tops with raw turbinado sugar. Bake for 15-18 minutes, or until cooked through.

Oatmeal Cake Recipe: Fall Favorites

A really good cake. It could even be labeled “hard to resist”.

Something about fall makes us want to cook. And not just anything, but warm, comforting foods. The foods that were too hot to cook in the summer. One of our family favorites is Oatmeal Cake. It’s incredibly moist, slightly sweet, and is kind of a unique to bring to a family gathering. And don’t skip the topping step. It’s like frosting, except for better. Trust us.

And without further ado, our favorite recipe for Oatmeal Cake.

Oatmeal Cake

1 1/2 c. boiling water

1 c. quick oats

1/2 c. shortening

1 c. sugar

1 c. brown sugar

2 eggs

1 1/2 c. flour

1 tsp. baking soda

1 tsp. cinnamon

1/2 tsp. salt

Topping:

1/2 c. melter butter

1/4 c. evaporated milk

1/2 c. brown sugar

1 1/2 c quick oats

1 tsp. vanilla

 

Pour boiling water over oats and let stand for 15 minutes. Cream shortening and sugars together. Add eggs. Mix in dry ingredients. Add oats last. Pour into a greased 9 x 13 pan. Bake at 375 degrees for 25-30 minutes.

For the topping, mix all ingredients, spread on cake, and put under boiler until browned lightly.

 

 

 

 

Hilltop Methodist Church Consignment Sale

It’s that time of year again! Time to get our shop on at the semi-annual Hilltop UMW Consignment Sale. Now we’ve shopped our fair share of consignment sales here in Utah, and this has got to be our favorite. It’s clean, extremely well organized, and sure beats garage sale-ing to find good deals. We love the fall sale because it’s a great time to snag early Christmas presents for the young ‘uns. All of the specs are below.

Tips:
If it’s your first year, there are a few things you should know:

1. Take a large bag and/or a laundry basket to haul your goods. There is no way you’ll be able to hold it all. Trust us.
2. Bring cash or your checkbook.
3. Pack a snack. They have an efficient checkout method, but if you come during peak times, you may find yourself in line for a while.
4. Bring a friend. It’s a lot easier when you have a pal to help you decide what should stay or go.

New Midvale Elementary School! Yay!

We are super excited about the new Midvale Elementary school that is going up right in our backyard at 7830 Chapel Street. If you haven’t had a chance to stop by, the ribbon cutting was on August 13th, 2012, and the first day of classes will be coming up next week on August 27th. Well friends, it’s here. That time of year where you can buy local fruits and veggies at your local farmer’s market. We’ve rounded up a few of our local favorites that we think you may enjoy.

What: Downtown Farmer’s Market in Salt Lake City
When: Saturdays, June 9th – October 27th, 8am – 1pm & Tuesday Evenings
Where: Pioneer Park, 400 W. 400 S., Salt Lake City, Utah
Why: You can’t go wrong with the Downtown Farmer’s Market. It’s in the heart of Salt Lake, attracts thousands of patrons, and has top notch food and entertainment. If you’re new to the world of farmer’s markets here in Utah, this is a good one to start out with.

What: Gardner Village Farmer’s Market
When: Saturdays, June 2nd – September 29th, 9am – 2pm
Where: Gardner Village, 1100 W. 7800 S., West Jordan, Utah
Why: This is a pretty happening place for crafts and food all year round, so their farmer’s market is sure to please.
